I am treating my cooking deficiency. For therapy today, I made green tea ice cream and ginger cookies, and then made them into ice cream sandwiches.


I first made the base for the green tea ice cream so it could cool in the fridge while I baked the cookies. I'll be posting the recipe in the next few days.

Ice cream ingredients, hmmm.....



Ginger Cookies
adapted from Happy Healthy Life

Wet:
2 cups flour
1/2 cup sugar (I used turbinado)
1 Tbsp ginger powder
3/4 tsp salt
1/2 tsp cinnamon
1/2 tsp baking soda

2 tsp baking powder


Dry:
1 tsp vanilla extract
1 Tbsp grated fresh ginger
1/4 cup + 1 tsp water
1/4 cup molasses
1/4 cup oil (use a mild tasting oil)

Preheat the oven to 375 F.
In a large bowl, combine flour, sugar, ginger powder, salt, cinnamon, baking soda and powder (all the dry ingredients)

In a medium bowl, whisk together vanilla, fresh ginger, water, molasses, and oil (all the wet ingredients). I used a microplane grater for the ginger, but a regular one will work, as well.

Add the wet mixture to the dry, and mix well to combine. Using a tablespoon, portion out balls of dough and place on a greased cookie sheet. With a moistened hand, flatten each dough ball gently with the palm of your hand. The cookies won't spread out, so flatten to however thick you want the cookies to be. They will puff up a bit in the oven.

Bake for about 8-10 minutes. You want them to be soft in the center and a bit firm around the edges. Over baking will cause them to be tough and not chewy enough.

Cool completely if making into ice cream sandwiches.

Makes about 30 cookies

After baking the cookies, I churned the chilled ice cream mixture in my ice cream maker. After about 25 minutes, it was the perfect consistency for assembling ice cream sandwiches.


The ice cream was soft enough to smoosh between the cookies. These went into the freezer after assembling to harden. There was extra ice cream left, so that went into the freezer, too. I had a nice afternoon snack of a ginger cookie and the ice cream I licked scooped off the ice cream maker :P
